Easy and Healthy Blueberry Muffins Recipe! These clean eating and flourless blueberry muffins might be the easiest muffins you ever make - All you have to do is BLEND and BAKE. Plus, these muffins will actually keep you full, they're packed with fiber from the oatmeal flour, and protein from the Greek yogurt.

Ingredients

Added to blender

  • 1/4 Cup (60mL) unsweetened vanilla almond milk
  • 1 Egg
  • 1 Cup (225g) non-fat Greek yogurt
  • 2 Cups (160g) oats
  • 4 Tbsps (48g) sugar substitute
  • 2 Scoops (60g) vanilla whey protein powder
  • 1 1/2 Tsps baking powder
  • 1/2 Tsp baking soda
  • 1/2 Tsp cinnamon
  • 1/4 Tsp salt
  • 1 1/2 Tsps vanilla extract

Added separately

  • 3/4 Cup (105g) Blueberries
  • Mix with 1/2 Tbsp (6g) oat flour

Instructions

  1. Add all ingredients listed above to your blender
  2. Blend until smooth
  3. Coat a muffin tray with baking spray
  4. Equally add batter between 9 molds
  5. Bake at 350 degrees | 177 Celsius for 20-25 minutes
  6. Cool on a wire rack
