This Keto Cheeseburger Casserole Recipe is one of the BEST easy low carb keto dinner recipes you can make. It’s made with ground beef and just a few other keto friendly ingredients. Plus, it’s a great meal prep recipe that takes LESS THAN 30 MINUTES to make!
1–2 Tbsps (20g) Macadamia Nut Oil
2Lbs (907g) 80/20 Ground Beef
2 Cloves of Garlic Minced
1 Medium Onion Chopped (225g)
2 1/2 Cups Shredded Cheddar Cheese (280g)
1/4 Cup (56g) Avocado Mayonnaise
1/4 Cup (56g) Low Sugar Ketchup
Crushed black pepper to taste
Remove the skins on the garlic, mince, and set aside.
Cut the ends off of the onion, cut it in half, remove the skin, chop it into small pieces, and set aside.
Now, measure out the cheddar cheese, and set it aside.
Next, in a small dish, add the mayonaisse and low sugar ketchup and mix until combined.
At this point, set a burner on your stove to medium heat, coat a large skillet with the macadmia nut oil, add the garlic, and cook until fragrant.
Once fragrant, add the onion, and cook until soft & translucent.
When that happens, add the ground beef, and work it into the onions and garlic.
Cook until the beef has been cooked through…stirring ocassionally.
Now, strain any excess juices from the beef using a large wire strainer, and transfer it back to the pan.
Turn the heat of the burner down to low, add the sauce we made from earlier, some crushed black pepper, and around 1/3 of the cheddar cheese we prepared.
Cook and stir until the cheese melts.
Once it does, top the casserole with the rest of the cheese.
Now, set your oven to broil, and broil the skillet until the cheese melts.
Once it does, top with some fresh chives, and enjoy!
To keep the carbs as low as possible, shred your own cheddar cheese. The prepackaged kind will come with “starches” which will increase the carb count on the cheese.
