Say hello to the first overnight oats recipe for this blog or The Diet Chef YouTube channel!
As you guys know, I'm a big, BIG, pumpkin fan. So it just seemed appropriate (especially since it's fall), that the first recipe was pumpkin pie overnight oats!
Now obviously these overnight oats aren't exactly pumpkin pie, but they're pretty darn close. If you closed your eyes, and just focused on the delicious flavors your tongue was experiencing, you might just think it was.
These overnight oats are:
Pumpkintastic
Slightly pudding-y
Perfectly sweetened
& Have just enough spiciness
Now these overnight oats are quite delicious, but my favorite part is that they ONLY take 2 minutes to prep! However, they have to refrigerate for 6-8 hours so the chia seeds can work their magic and really thicken this oatmeal up. Since the hardest part is waiting patiently for this to happen (atleast it is for me), I recommend making your oats right before bed. That way when you wake up breakfast is already made and you can start your day with little to no clean-up. Hooray to that!

Pumpkin Pie Overnight Oats
Healthy pumpkin pie overnight oats!

Ingredients
- 1 Tbsp (13g) chia seeds
- ¼ Cup (20g) oats
- ¼ Cup (60g)pure pumpkin
- ½ Tsp of pumpkin pie spice
- ½ Cup (120mL) Milk of choice
- 2 Tbsp (30mL) Low Calorie Maple Syrup (I used Walden Farms)
Instructions
- Add all ingredients to a sealable jar
- Mix extremely well
- Seal the jar and refrigerate 6-8 hours

1/2 cup of what? some of your recipes aren't complete, i noticed. this one has the issue where it doesn't specify the product after the measurement. would love to make this so i hope this gets to you!
Joseline - It was "Milk of choice" I don't know how that was left out of the recipe. Thanks for making me aware of this. Sometimes I'm doing so many things at once I end up making mistakes. Happens more often than I'd like to admit :) Hope you enjoy the oats!
