CREAMY CHICKEN ENCHILADA SOUP

INGREDIENTS

– 1  chicken breast – 1 onion – 1 can black beans – 1 can corn kernel – 1 tbsp butter – 1 tbsp olive oil – 4 cup chicken broth – 2 cups tomato sauce

INGREDIENTS CONTINUED 

– 1 tsp celery salt – 1 tsp salt – ½ tsp black pepper – 1 tsp paprika – 1 cup cheddar cheese – 1 cup cream cheese

INSTRUCTIONS

1. Fry onion in pot with butter and oil. Add the chicken, broth, tomato sauce, black beans, and corn. Simmer for 30 minutes. 2. Take chicken out and shred.

3. Return to pot and add cream cheese. Stir to melt. Add cheddar cheese.
