– 2 small eggplants
– 1 tbsp olive oil
– ½ cup ricotta
– ¼ cup, ½ tbsp parmesan
– 1 small egg
– 1 tsp garlic powder
– 1 tsp Italian herbs
– 1 cup marinara sauce
– ½ cup mozzarella cheese
1. Combine ricotta, parmesan, egg, garlic, herbs, salt, and pepper.
2. Roast eggplant for 10 mins 400°F.
3. Fill eggplant with cheese mix, roll. Cover with cheese, bake 20 mins.
