PROTEIN PACKED PASTA SALAD

INGREDIENTS

– 8 oz. chickpea pasta  – ½ red bell pepper – 1 cup broccoli florets – ½ cup cherry tomato – ¼ cup red onion – 1.5oz. black olives – Salt and pepper – Fresh parsley

INGREDIENTS FOR DRESSING

– 3 tbsp extra-virgin olive oil – 2 ½ tbsp red wine vinegar – ½ tbsp mustard – 1 small clove garlic, minced – Salt and pepper, to taste

INSTRUCTIONS

1. Cook pasta according to directions. 2. Mix dressing ingredients. 3. Add veggies and pasta and mix. Refrigerate for 30 minutes.
