Healthy and easy Baked Oatmeal Cups! These chocolate oatmeal cups make the perfect on the go breakfast idea, and snack idea too. They're made with simple ingredients like banana, peanut butter, and cocoa powder. You can even give these oatmeal cups a boost of protein by adding some protein powder too.

Ingredients

  • 3 1/2 Cups (280g) Old Fashioned Oats
  • 2 Tbsps (10g) Unsweetened Cocoa Powder
  • 3/4 Cups (112g) Lily's Low Carb Chocolate Chips
  • 1 tsp Baking Powder
  • 1 1/2 Scoops (45g) Isopure Low Carb Chocolate Peanut Butter Protein Powder (or chocolate protein powder)
  • 1/4 Cup (50g) Stevia Sugar Blend (like Truvia) Heaping
  • 2 Medium (200g) Mashed Bananas
  • 2 Cups Unsweetened Vanilla Almond Milk
  • 1/2 Cup (132g) Peanut Butter

Instructions

  1. Pre-heat oven to 375 Degrees.
  2. Add all ingredients to a large bowl.
  3. Mix until well combined, and a thick batter forms.
  4. Once combined, line a 12 slotted muffin tray with paper muffin cups, and add the batter evenly be-tween the trays (fill all the way to the top).
  5. Bake for around 25 minutes.
  6. Once the muffins are done baking let them cool down completely in the muffin tray itself.
  7. Once cooled, store in an air-tight container for several days. This recipe makes 12 servings.

Notes

*NOTE: If you DO NOT want to use protein powder add the ingredients below:
4 Tbsps Peanut Powder/Flour (24g)
1 Tbsp Stevia + Sugar blend "Truvia" (10g)
1 Tbsp Cocoa Powder (5g)
