Healthy candied pecans

Ingredients

  • 1 Cup (100g) pecans
  • 1/4 Cup (60ml) low-cal maple syrup - I use Walden Farms
  • 1 1/2 Tbsp (18g) sugar substitute
  • 1/2 Tsp cinnamon

Instructions

  1. Coat pecans evenly in the pancake syrup
  2. Add nuts to a pan coated with non-stick baking spray
  3. Cook on a medium heat setting until the pancake syrup caramelizes on the nuts
  4. Transfer the nuts onto parchment paper and coat with 1 Tbsp (12g) sugar substitute and 1/4 tsp cinnamon - I like to mix the two together before adding
  5. Add the nuts back to the pan and cook until sugar just begins to caramelize
  6. Top the pecans with the remaining sugar and give them one last stir
  7. Now bring the nuts back to the parchment paper and allow them to cool and dry
  8. The longer they dry the crunchier they become
  9. Store in an airtight jar
