This keto taco casserole recipe is one of the best keto meals you can make! It’s got all the deliciousness of tacos, without all the carbs! And it’s incredibly easy to make this low carb taco casserole too. From start-to-finish, the entire recipe takes around 45 minutes, and most of that is cook-time!

Ingredients

1 Tablespoon (15g) macadamia nut oil or avocado oil

¼ Onion (40g), chopped

1 Jalapeno (20g), finely chopped

1 Pound (455g) 80/20 ground beef

3 Tablespoons (6-8g) keto taco seasoning

½ Cup (100g) tomatoes, chopped

1 Large Egg

½ Cup (100g) cooked black soybeans

1 Cup (112g) cheddar cheese, grated

½ Cup (90g) black olives, sliced — optional

Salsa — optional

1 Jalapeño, sliced — optional

Instructions

  1. Heat the oil in a medium-sized pan.
  2. Saute the onions and jalapeno on medium heat, until the onion is translucent and soft.
  3. Add ground beef, tomatoes, and keto taco seasoning.
  4. Cook for 6 minutes.
  5. Let it cool slightly
  6. When the mixture has cooled, add 1 egg, along with the soybeans, stir to combine.
  7. Transfer into a casserole dish or individual servings pans.
  8. Top with cheese and place a few jalapeno slices on top.
  9. Bake for 20-30 minutes at 350°F.
  10. Before serving consider topping with black olives, fresh tomato salsa, and fresh slices of jalapeño.

Notes

Shred the cheese yourself to keep the dish as low carb as possible!
