Keto Thumbprint Cookies | One of The Best Holiday Cookies

A raspberry jam filled thumbprint cookie that's set on top of a peach jam filled cookie. They are set on a plate with other cookies as well.

These keto thumbprint cookies have a buttery shortbread base with a smooth jam-filled center. Each melt in your mouth thumbprint cookie has only 2g NET CARBS. Plus, these keto thumbprint cookies are super easy to make and is such a fun holiday activity!

Ingredients

1/4 cup (55g) cream cheese

1/4 cup (55g) softened butter

1/3 cup (65g) Granular Swerve

1/2 tsp (2g) pure vanilla extract

1 egg

Just less than 1 1/2 cups (150g) almond flour

Around 1/2 a cup (135g) sugar-free jam for filling

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Make sure the butter and cream cheese are slightly softened.
  3. Put the flour into a bowl and set it aside. 
  4. With a stand or hand mixer, cream the butter, cream cheese, egg, granular sugar, and vanilla extract in a large bowl until fluffy. 
  5. Gradually add the flour to the mixing bowl with the rest of the ingredients, and mix until combined.
  6. Once everything is combined, cover your bowl of cookie dough and put it into the fridge to chill for 60 minutes.
  7. After your cookie dough has chilled, scoop rounded tablespoons of the dough and roll them into individual balls to make each cookie. 
  8. Place the cookies on your parchment-lined baking sheet.
  9. In the middle of each ball, GENTLY press your thumb, or use the back of 1 teaspoon, to create an indentation.
  10. Then spoon 1/2 teaspoon of your sugar-free jam of choice into each indent. 
  11. Bake the cookies for 15 minutes until they are slightly brown.
  12. Let them cool on the cookie sheet for about 10 minutes before moving to a wire rack to cool completely.
  13. After about 10 minutes, remove the cookies from the rack and take a bite of smooth, buttery goodness.

Notes

The scale up function only scales up the cups and not gram measurements. If using  grams, you must scale them up yourself.
