BAKED EGGPLANT

INGREDIENTS

– 3 tablespoon olive oil – 1.25lb. eggplant – Salt and pepper – 1-2 cloves garlic, minced – ½ tablespoon chopped parsley

INSTRUCTIONS

1. Cut eggplant into chunks. Season with oil, salt, and pepper. 2. Bake at 425F for 30 minutes. 3. Toss in garlic and parsley.
