Apple Spice Protein Pancakes

Ingredients

  • 5 Egg whites or (175g) egg substitute
  • 3/4 Cup (60g) oats
  • 1/4 Cup (55g) non-fat Greek yogurt
  • 3/4 Cup (90g) unsweetened applesauce
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp nutmeg
  • Apple topping...
  • A few sliced diced apple (30g)
  • 1 Tbsp (15g) calorie free/low-calorie pancake syrup
  • Pinch of cinnamon
  • Pinch of nutmeg

Instructions

  1. In a blender add:
  2. -5 Egg whites or (175g) egg substitute
  3. -3/4 Cup (60g) oats
  4. -1/4 Cup (55g) non-fat Greek yogurt
  5. -3/4 Cup (90g) unsweetened applesauce
  6. -1/2 tsp cinnamon
  7. -1/4 tsp baking powder
  8. -1/4 tsp nutmeg
  9. Cook on medium heat in a skillet coated with non-stick baking spray
  10. Caramelized apple topping:
  11. A few sliced diced apple (30g)
  12. -1 Tbsp (15g) calorie free/low-calorie pancake syrup
  13. Pinch of cinnamon
  14. Pinch of nutmeg
  15. Cook until caramelization occurs
