I have had a serious obsession with these apple spice protein pancakes as of late.
Like an every day (sometimes twice a day) obsession.
Where do I begin with why these are so amazing. Maybe I should just make a list...
Reasons why you need to make these!
1. Fluff factor (it's on point)
2. Spice ratio (dreamy)
3. Just do it for the caramelized apple topping (mouth watering)
4. Because you just throw everything in a blender (simple right?)
5. Last but not least, they'll keep you full, and the macros are grrrrreat (Tony The Tiger anyone?)

Ingredients
- 5 Egg whites or (175g) egg substitute
- ¾ Cup (60g) oats
- ¼ Cup (55g) non-fat Greek yogurt
- ¾ Cup (90g) unsweetened applesauce
- ½ tsp cinnamon
- ¼ tsp baking powder
- ¼ tsp nutmeg
- Apple topping...
- A few sliced diced apple (30g)
- 1 Tbsp (15g) calorie free/low-calorie pancake syrup
- Pinch of cinnamon
- Pinch of nutmeg
Instructions
- In a blender add:
- -5 Egg whites or (175g) egg substitute
- -¾ Cup (60g) oats
- -¼ Cup (55g) non-fat Greek yogurt
- -¾ Cup (90g) unsweetened applesauce
- -½ teaspoon cinnamon
- -¼ teaspoon baking powder
- -¼ teaspoon nutmeg
- Cook on medium heat in a skillet coated with non-stick baking spray
- Caramelized apple topping:
- A few sliced diced apple (30g)
- -1 tablespoon (15g) calorie free/low-calorie pancake syrup
- Pinch of cinnamon
- Pinch of nutmeg
- Cook until caramelization occurs
