Gluten Free Meatloaf Recipe

This gluten free meatloaf has a tender center, crisp crust, and delicious ketchup glaze topping, making each mouthful a heavenly experience. And this gluten free meatloaf recipe is easy to prepare in just 10 minutes.

Ingredients

1.8lbs (850g) ground beef

1/2 cup (50g) almond flour or gluten-free rolled oats

2 stalk of leek, finely minced (combine using hand with half a teaspoon of salt, to soften)

1/2 cup (50g) parmesan cheese

2 tbsp olive oil

2 eggs

2 clove of garlic, minced

1 tbsp mustard

2 tbsp tomato paste

1 tbsp mayonnaise

1 tbsp soy sauce

chopped parsley

Salt and pepper

6 tbsp gluten free ketchup

1 tbsp sugar

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Coat a loaf pan (I used 9x5) with olive oil and set aside until you prepare the mixture for the meatloaf. 
  2. In a large bowl mix together the ground beef, grated Parmesan cheese, almond flour, eggs, garlic, mustard, tomato pasta, mayonnaise, Soy Sauce, sea salt, and black pepper. Combine all the ingredients well, then add the salted leeks and chopped parsley.
  3. Pour mixture into a loaf pan and bake for 35-40 minutes.
  4. In the meantime, prepare the glaze by mixing the ketchup and sugar in a small bowl. At the end of the cooking time, coat the meatloaf and return to the oven to bake for another 10 to 15 minutes or until internal temp reaches 160°F. Slice, serve warm, and enjoy!
