We're taking a classic meatloaf in this recipe and switching it up to make it gluten free. And honestly, it couldn't be any easier or delicious!
There's really only one main substitute to do this, and I have a few secret ingredients that give this gluten free meatloaf a unique depth of flavor.
Since it's so simple and easy to make, this recipe really is a life-saver when you need a meal that will feed the whole family on a busy weeknight.

Ingredients
As with so many home cooking classics, this gluten free meatloaf is made from mostly staple ingredients. So you should have a good portion of these ingredients at home already!
With that said, here's everything you'll need:
- 1.8lbs (850g) ground beef
- ½ cup (50g) almond flour or gluten-free rolled oats
- 2 stalk of leek, finely minced (combine using hand with half a teaspoon of salt, to soften)
- ½ cup (50g) parmesan cheese
- 2 tablespoon olive oil
- 2 eggs
- 2 clove of garlic, minced
- 1 tablespoon mustard
- 2 tablespoon tomato paste
- 1 tablespoon mayonnaise
- 1 tablespoon soy sauce
- chopped parsley
- Salt and pepper
- 6 tablespoon gluten free ketchup
- 1 tablespoon sugar
The main switch to make this meatloaf gluten free is using either almond flour or gluten free rolled oats in place of breadcrumbs. Whichever one you choose will work to help bind the ingredients together and add to the delicious flavor. How to Make Gluten Free Meatloaf
As I said before, this recipe really couldn't be more straightforward! All you have to do is a little mixing and let the oven take care of the rest.
And this recipe is beginner-friendly, so even if you've never cooked meatloaf before, it will turn out great.
I keep telling you how easy this is, but now it's time for me to prove it, so grab your ingredients and let's get cooking!
Step 1: Prep
First, preheat the oven to 375 degrees Fahrenheit (190°C).
Then take a loaf pan can get out a loaf pan - I used a 9x5 - and coat the bottom and sides well with olive oil. Set the pan aside for after you prepare the meatloaf mixture.
Step 2: Mix All the Ingredients
Now take out a large bowl and add the ground beef, grated parmesan cheese, almond flour, eggs, garlic, mustard, tomato paste, mayonnaise, soy sauce, sea salt, and black pepper to it.
Then mix everything together in the bowl until it's well combined. Once it is, add the salted leeks and chopped parsley and mix again until they are incorporated into the mixture.
Step 3: Baking The Meatloaf & Making The Glaze
Next, pour the meatloaf mixture into the prepared loaf pan and evenly spread it out with a rubber spatula. Then bake it for about 35-40 minutes.
While the meatloaf is baking, you can make the ketchup glaze. To do this, add the ketchup and sugar to a small bowl and mix them together.
Once it cooks for 35-40 minutes, take it out of the oven, spread the meatloaf glaze on top, then return it to the oven to bake for another 10-15 minutes. Or until the internal temperature reaches 160°F (71°C).
After it cooks, slice, serve warm, and enjoy!
How To Store Meatloaf
This easy meatloaf recipe will make about 10 slices, so you'll have plenty for a big family dinner. And odds are you'll even have some leftovers that you can enjoy for lunch or dinner the next few days!
To store the leftovers, let the meatloaf cool completely and then transfer it to a shallow airtight container. Or you can wrap it tightly with heavy-duty tin foil or plastic wrap. Either way, it will last in the fridge for up to 4 days.
How To Reheat Meatloaf
Meatloaf is best enjoyed warm, so to reheat it, first preheat the oven to 250°F (120°C).
Then put as many slices of meatloaf that you want to heat in an oven safe baking dish. Add a tablespoon of water or broth to keep it from drying out, and cover the dish with aluminum foil.
Now put the meatloaf in the oven for about 25 minutes until it reaches your desired temperature.
