Healthy, Low Calorie Rice Pudding

Ingredients

  • 1 Cup (100g) brown rice
  • 3 Cups (710mL) unsweetened vanilla almond milk
  • 1 1/2 Tbsp (22mL) low-calorie/calorie-free pancake syrup
  • 1 Tsp vanilla extract
  • 2 Tsp (8g) sugar substitute
  • 1/2 Tsp ground cinnamon

Instructions

  1. In a medium sized pot add in
  2. (1) Cup (100g) brown rice
  3. (3) Cups (710mL) unsweetened vanilla almond milk
  4. (1 1/2) Tbsp (22mL) low-calorie/calorie-free pancake syrup
  5. (1) Tsp vanilla extract
  6. (2) Tsp (8g) sugar substitute
  7. (1/2) Tsp ground cinnamon
  8. Mix until combined
  9. Turn your burner up to medium and bring to a rolling boil
  10. Once you have a boil cover and reduce to a simmer for one hour
  11. Occasionally stir your rice pudding
  12. Serve hot
