Healthy low-fat peanut butter cookies

Ingredients

  • 1/2 Banana mashed (50G)
  • 1 Tbsp (10g) oat flour
  • 1 Tbsp (10g) coconut flour
  • 7 Tbsp (42g) peanut flour (PB2)
  • 1 Scoop (30g) vanilla Isopure
  • 3/4 Tbsp (9g) sugar substitute

Instructions

  1. Add all ingredients to a small bowl
  2. Mix with a spatula until crumbly
  3. Use your hands to roll and form the dough into a ball
  4. Separate the ball of dough into 15 equal sized balls (about half the size of a ping pong ball)
  5. Refrigerate for 30 minutes
  6. Score the balls with a fork before serving
