    Healthy Peanut Butter Cookies

    The healthiest peanut butter cookies EVER! You don't even have to bake them. Each cookie is only 27 calories and has 3g of protein. #Healthy #Cookies

    I realize there are many different "healthy" ways of making peanut butter cookies. I mean, they are one of my favorite types of cookies, so you could say I've baked a few batches of these before. However, this time I thought it'd be neat if I could come up with a lower fat version of a peanut butter cookie. Not because fat is "bad" for you (it's not), but because if your macros for fat are on the low side then you really can't indulge in peanut butter cookies.

    Sure, normally you might be able to fit 1, 2 or possibly 3 cookies into your macros, but 10, probably not. Well, even if you eat 10 of these peanut butter cookies, you'll only be consuming 5g of fat. Plus, the recipe is beyond simple, you don't even have to bake 'em.

    Macros (per cookie):

    27.5 Calories, .5g Fat, 3.3g Carbs (.8g fiber), 3g Protein

    Healthy low-fat peanut butter cookies

    Ingredients

    • ½ Banana mashed (50G)
    • 1 Tbsp (10g) oat flour
    • 1 Tbsp (10g) coconut flour
    • 7 Tbsp (42g) peanut flour (PB2)
    • 1 Scoop (30g) vanilla Isopure
    • ¾ Tbsp (9g) sugar substitute

    Instructions

    1. Add all ingredients to a small bowl
    2. Mix with a spatula until crumbly
    3. Use your hands to roll and form the dough into a ball
    4. Separate the ball of dough into 15 equal sized balls (about half the size of a ping pong ball)
    5. Refrigerate for 30 minutes
    6. Score the balls with a fork before serving

      Any sub for bananas? Apple sauce? Many people (obviously including me) have an allergy to raw bananas.

        Applesauce might work, but to be honest I never tried applesauce when coming up with the recipe. You will most likely have to change the quantities of the flour/protein powder to achieve the solid ball like consistency seen in the video. Just keep that in mind :D
