Instant Pot Keto Orange Chicken Recipe | Crockpot Option Too

This Instant Pot Keto Orange Chicken Recipe is incredibly simple and easy to make. It takes less than 20 minutes to whip up, and it's got all the flavor of "normal" orange chicken, without all the carbs. Plus, you can make this healthy recipe not just in your Instant Pot, but your crockpot too!

Ingredients

Chicken:

1 1/2 pounds chicken breast or thighs (cut into 1-2 inch pieces)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons sesame oil

For the sauce:

1 Orange zested and juiced

1 Tablespoon apple cider vinegar

1 Tablespoon ginger (grated)

2 Cloves garlic (minced)

¼ Cup (60mL) BRAGGS Liquid Aminos

1/2 Teaspoon red pepper chili flakes (adjust to taste)

1 Tablespoon (9g) Confectioners Swerve

1/2-1 Teaspoon (1-2g) Xanthan Gum

Instructions

Instant Pot Cooking Instructions:

  1. Season the chicken with salt and black pepper.
  2. On SAUTE mode in the Instant Pot, heat the sesame oil for 1 minute. Brown chicken in batches. It’s important not to crowd the pan, otherwise the meat will steam instead of browning. If you want a golden-brown chicken, brown it on the stove top.
  3. Combine all sauce ingredients, except Xanthan Gum in a medium bowl.  Add the mixture to the pot and deglaze, scraping all of the bits stuck to the bottom with a wooden spoon.
  4. Close the lid and select 5 minutes on High Pressure, then release the pressure.
  5. Select again the Saute mode. Add Xanthan Gum and mix well. Allow the sauce to bubble and thicken for about 2 minutes.
  6. Serve Orange chicken over cauliflower rice or salad leaves, garnish with green onions.

Crockpot Instructions:

Brown the seasoned chicken in a pan with the sesame oil.

Once the chicken is browned, transfer it to your crockpot, and pour in all of your sauce ingredients except the xanthan gum.

Cover the crockpot and cook for 2-3 hours on low, or around 1 hour on high.

Only add 1/2 to 1 teaspoon of xanthan gum if the sauce isn't as thick as you'd like it to be when the chicken is finished cooking.
