These Keto Butter Cookies are made in 15 minutes, require only 5 ingredients, and have less than 1 net carb each! So, they're incredibly simple and easy to make. But, the best thing about this low carb cookie recipe is how nummy these cookies are. They're soft, chewy, incredibly buttery, and melt in your mouth delicious.

Ingredients

Heaping 1/4 Cup (60g) Salted Butter

1 Cup (112g) Blanched Almond Flour

1/4 Cup (35g) Confectioners Swerve

1/2 Tsp Pure Vanilla Extract

1/2 Tsp Baking Powder

Optional Chocolate Drizzle:

1 Tsp (5g) Ghee ... or Butter

2 Heaping Tbsps (28g) Keto Chocolate Chips

Instructions

Pre-heat your oven to 325 degrees Fahrenheit.

Melt the butter.

Add all of the ingredients to a medium sized bowl.

Mix until crumbly.

Once crumbly use you hands to form a ball of dough.

Now use a cookie scoop - mine's about the size of a tablespoon - and form 9 equal sized cookies on a baking sheet lined with parchment paper.

Bake for 5-6 minutes - until the edge just begin to look golden brown.

Remove from the oven, and cool to room temperature...atleast 15 minutes

Chocolate Drizzle:

Add the ingredients to a small dish.

Melt in the microwave.

Combine with a spatula until a chocolate sauce forms.

When it does add it to a zip-lock bag, twist the bag in half, cut the corner off and drizzle chocolate on . cookies.

Notes

The Macros DO NOT include the "carbs" from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list "sugar alcohols" as carbs, but that doesn't mean they should be tracked as such. That's why it's ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES.
