These almond flour butter cookies are perfectly crisp, melt in your mouth with each bite, and have a sweet, buttery flavor that's complete with the melted chocolate drizzle.
Gah, they're just so good, and so easy to make too! Seriously, from start-to-finish, you can whip up a batch of these almond flour butter cookies in 15 minutes. Maybe even a little less.
I love whipping up these homemade Danish butter cookies for the holidays, along with my keto thumbprint cookies. My whole family just raves over the two and can't believe they're keto friendly and almond flour cookies!
Ingredients
Now, another reason to love these gluten free butter cookies is that you only need 5 ingredients to make them. And all of them are standard keto pantry items, so you might just have them all in your kitchen already!
Anyway, here's what you'll need:
- Salted Butter
- Almond Flour
- Confectioners Swerve
- Pure Vanilla Extract
- & Baking Powder
Not too shabby, right?!
Ingredients substitutions
As always, the best way to make these keto butter cookies is by using the ingredients in the original recipe.
That said, I know a lot of you will be curious about how to substitute ingredients out of the original recipe. Either because of personal preference or allergies.
So let's talk about some substitutions!
Almond Flour Substitutions
Ok, so there are a couple of fantastic substitutions for almond flour, and then some not so good ones.
The best way to substitute almond flour is with walnut flour or sunflower seed flour.
And, there are two reasons why you'll want to use these flours.
Number one, they both are very low carb flours, so they're perfect for the keto diet. And number two, you can substitute them with almond flour on a 1:1 basis.
At this point, you may be wondering, what about coconut flour?
And my answer to this is...DO NOT use it in place of almond flour! This is a rookie mistake, and it's the quickest way to screw up a recipe.
Coconut flour is extremely absorbent, and almond flour is not. So if you use coconut flour, either your keto butter cookies will turn out extremely dry, or you'll end up with a crumbly mess.
And I'm assuming you don't want to end up with either of those things, so stick with blanched almond flour.
Confectioners Swerve Substitution
Let's get this out of the way first...Stevia is NOT a good substitution for Swerve.
Stevia is - in many cases - SWEETER than sugar. I mean, Stevia by itself is about 300 times sweeter than sugar.
And Swerve, well, it's as sweet as sugar.
So you can imagine that substituting one for another is probably not a good idea.
Even the "blends" that Stevia is mixed into are usually sweeter than sugar too.
Having said that, if you happen to find one that reads "1:1 as sweet as sugar" it could work for this butter cookie recipe.
Now, the best way to substitute the Confectioners Swerve is by using this Granulated Monk Fruit from Lakanto.
You'll want to blend it into a powder though to make it "confectioner"... which just means powdered.
As far as using ANY other sweeteners, just make sure it's 1:1 as sweet as sugar. And that it doesn't have maltodextrin, dextrose, etc. added to it as a filler. If it meets those requirements, you can substitute it 1:1 with Swerve.
By the way, a lot of people don't know this but plain erythritol is only 70% as sweet as sugar.
So don't use it by itself.
Your cookies won't be sweet enough.
How To Make Keto Butter Cookies
Ok, so, I have a feeling you're going to dig these steps. Mostly because there aren't that many.
Like I said before, this is a simple & easy keto cookie recipe, and I'm a man of my word.
So, this is what you'll need to do...
- Melt the butter
- While the butter is melting, add all of the other ingredients to a medium-sized bowl
- Mix until crumbly, and then use your hands to form a ball of dough
- Use a cookie scoop to make 9 cookies
- Bake at 325 degrees F for 5-6 minutes
- LET COOL TO ROOM TEMP
That's it.
6 easy steps are all you need to follow to make these low carb butter cookies.
The most important step is definitely letting the cookies cool down. When they come out of the oven they will be incredibly soft, but after about 15 minutes they'll firm up.
So make sure you give them time to cool!
Sugar Free chocolate drizzle
Ok, so this is an optional - but encouraged - step to making these cookies.
Because, well, let's be honest, who doesn't love adding chocolate to things?!
So, the drizzle is very, very simple to make.
Just add 1 teaspoon - 5 grams - of ghee or butter to a small dish, along with 2 heaping tablespoons of sugar free chocolate chips.
Ok, so, now just melt the ghee and chocolate chips together in the microwave, combine them into a sauce with a spatula, and then add the sauce to a zip-lock bag.
At this point, you've got a makeshift piping bag to drizzle chocolate onto your butter cookies. So, twist the bag in half to build up some pressure, and cut one of the corners off of it to apply the drizzle.
Apply all that chocolate deliciousness, and enjoy these sugar free butter cookies!

Ingredients
Heaping ¼ Cup (60g) Salted Butter
1 Cup (112g) Blanched Almond Flour
¼ Cup (35g) Confectioners Swerve
½ Tsp Pure Vanilla Extract
½ Tsp Baking Powder
Optional Chocolate Drizzle:
1 Tsp (5g) Ghee ... or Butter
2 Heaping Tbsps (28g) Keto Chocolate Chips
Instructions
Pre-heat your oven to 325 degrees Fahrenheit.
Melt the butter.
Add all of the ingredients to a medium sized bowl.
Mix until crumbly.
Once crumbly use you hands to form a ball of dough.
Now use a cookie scoop - mine's about the size of a tablespoon - and form 9 equal sized cookies on a baking sheet lined with parchment paper.
Bake for 5-6 minutes - until the edge just begin to look golden brown.
Remove from the oven, and cool to room temperature...atleast 15 minutes
Chocolate Drizzle:
Add the ingredients to a small dish.
Melt in the microwave.
Combine with a spatula until a chocolate sauce forms.
When it does add it to a zip-lock bag, twist the bag in half, cut the corner off and drizzle chocolate on . cookies.
Notes
The Macros DO NOT include the "carbs" from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list "sugar alcohols" as carbs, but that doesn't mean they should be tracked as such. That's why it's ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES.

Your recipe on the site and video have a couple different measurements.
Say half cup almond flour on site but video says cup. And baking powder is different as well. The version written on the site was to wet and came out flat.

These cookies are very good. And easy to make. Instead of using a scoop, you already have the scale out. Weigh the ball of dough and divide by 10. You will have 10 cookies of about 21 grams each. Roll each into an egg shape and press down with a fork. Mine took 9 minutes to brown in a 325 degree oven. I let them cool while eating dinner. They were terrific. Keep up the great work!

Joe, I’ve been keto for almost 3 yrs and have lots of recipes but this is without a doubt my favorite cookie recipe. I love how fast it is make the cookies and I love how you measure using a scale meaning less clean-up! I have a list of my favs and this cookie is at the top of that list with two thumbs up next to it.👍🏼👍🏼 I have a few tweaks I do, I use about 2 tablespoons of coconut in the batter and I put walnuts on the top, after they bake and are cooled, I dip the bottoms in chocolate, 😋 yum!
