3 Cups (720mL) Chicken Broth

8 Oz (224g) Full-Fat Cream Cheese

1/2 Lb (225g) Button Mushrooms, Sliced

A Small Onion (70g), Chopped

1 Sprig Fresh Rosemary

A Tbsp (14g) Butter

1 Tsp Porcini Mushroom Powder (optional)

1/2 Tsp Salt


  1. In a large saucepan, melt the butter over medium heat. Sauté the onion with rosemary for 1-2 minutes until fragrant.
  2. Add in the sliced mushrooms and sauté until tender.
  3. Stir in the broth and seasonings...add the porcini powder - if using - at this point as well.
  4. Bring to a boil. Then reduce the heat to low and simmer for 5 minutes.
  5. Add the cream cheese. Continue stirring until it dissolves into the soup.
  6.  Serve hot!
  7. Store 4-5 days in the fridge. Or up to 3 Months in the freezer.
