Keto Lemon Poppyseed Mug Cake In 1 Minute

This quick and easy keto lemon poppyseed mug cake is low carb and just bursting with delicious lemony flavor! The best part is, you can dig into this refreshing keto dessert after just 1 minute in the microwave! Not to mention, the whole thing has only 5 net carbs! Honestly, my family LOVES it, and it might just be the best keto lemon poppy seed mug cake recipe ever!



1 Large Egg

1 ½ Tbsps (22g) Unsweetened Vanilla Almond Milk

1 Tbsp. (15g) Lemon Juice

½ Tbsp. (7g) Unsalted Butter

¼ Tsp. Pure Vanilla Extract

Just less than ½ a Cup (50g) Blanched Almond Flour

2 Heaping tbsps (20g) Confectioners Swerve

½ Tsp. Baking Powder

¼ Tsp. Salt

¼ Tsp. Poppy Seeds

Optional Drizzle:

½ Tbsp. (7g) Unsalted Butter

Heaping 2 Tsps. (7g) Confectioners Swerve

½ Tsp. Unsweetened Vanilla Almond Milk


  1. In a large measuring cup add all of the liquid ingredients, and whisk them until combined.
  2. Now add the dry ingredients, and mix until they’re well incorporated with the wet ingredients.
  3. Next, coat an 8oz (240mL) ramekin with baking spray, and add the batter to the ramekin.
  4. Cook for 30 seconds, check on it, cook for another 30 seconds, check on it again, and cook it for 15 more seconds if needed.
  5. While the mug cake is cooling, make the optional glaze.
  6. In a small dish add all of the ingredients, and mix until combined.
  7. Add the glaze to the mug cake once the cake has cooled, and serve.
