And that's especially true for this lemon poppyseed one.
First, this recipe is quick – you can make it in the microwave in literally just 1 minute.
Next, it's insanely EASY to put together. Seriously, all you have to do is mix the ingredients then pop it in the microwave!
By the way, you can totally make this in the oven too. More details on that later.
It's also packed with so much lemon poppy seed deliciousness. It's flavorful, has the perfect level of sweetness & tanginess, and a hint of crunchy texture from the poppyseeds!

Keto Lemon Poppyseed Mug Cake Ingredients
One of the best things about this keto dessert idea is that it uses a lot of staple ingredients for the keto diet that you probably already have in your fridge & pantry.
Here's what you'll need:
- A large egg
- Unsweetened vanilla almond milk – this one from Almond Breeze has the lowest net carbs!
- Lemon juice
- Unsalted butter
- Pure vanilla extract
- Blanched almond flour – sunflower seed flour or walnut flour are the best substitutes
- Confectioners Swerve - or Lankanto's Confectioners Monk Fruit
- Baking powder
- Salt
- Poppy seeds
By the way, I use a lot of these ingredients in most of my keto mug cake recipes – plus some other quick favorites like 1 minute keto pancakes and 1 minute double chocolate chip keto cookies – so you'll want to have them on hand if you don't already!
How to Make Your Keto Lemon Poppy Seed Mug Cake
Before that magical 1 minute cook time in the microwave, we'll first want to mix the ingredients for the mug cake.
Mixing them will only take a few minutes, so the whole process from start-to-finish is about 5 minutes.
Now, all you have to do is measure out, and add all of your wet and dry ingredients to a small bowl.
Be sure to whisk the wet ingredients together first, and then use a spatula to incorporate the dry ingredients into them.
You'll know it's mixed well when there are no clumps and a thick batter forms.
Then, when that's looking good, you'll want to coat an 8 ounce ramekin with baking spray to make sure the batter doesn't stick to it as the cake cooks.
Cooking The Mug Cake In The Microwave
Now, at this point, you'll want to cook it for about 30 seconds in the microwave. Then, take it out to check on it, and cook for another 30-45 seconds depending on your microwave's power.
My microwave at home is 1100 watts, so this recipe is based on that. You might have to adjust the cooking time if yours is different – so see what works best for you!
Oh, and mug cakes are best taken out when they're slightly undercooked since they'll continue to cook through while they cool. Just something to keep in mind!
Making & Adding The Keto Glaze
Now, while the lemon poppy seed cake is cooling, I highly recommend making a keto glaze for it.
The glaze is optional but HIGHLY recommended.
It just adds another layer of texture and a hint of sweetness that takes the deliciousness of this mug cake over the top.
Luckily, it comes together super quickly. Just combine another ½ a tablespoon of melted butter with 2 heaping tablespoons of Confectioners Swerve and ½ a teaspoon of almond milk. Mix all of that up with a small spatula, and voila, you've got a delicious glaze.
Now just drizzle that glaze over the finished keto mug cake, and serve!
Keto Lemon Poppy Seed Mug Cake in the Oven
So the fastest way to cook this recipe is in the microwave. But if you don't have a microwave or prefer to bake your cake, you can absolutely make this in the oven too!
To do that, follow the recipe instructions I mentioned earlier, but instead of cooking the cake in your microwave, you'll want to cook it at 350°F in your oven for 10 to 15 minutes.
Then, when it's done cooking in the oven, let it cool down before eating it.
It's as easy as that!

Ingredients
1 Large Egg
1 ½ Tbsps (22g) Unsweetened Vanilla Almond Milk
1 Tbsp. (15g) Lemon Juice
½ Tbsp. (7g) Unsalted Butter
¼ Tsp. Pure Vanilla Extract
Just less than ½ a Cup (50g) Blanched Almond Flour
2 Heaping tbsps (20g) Confectioners Swerve
½ Tsp. Baking Powder
¼ Tsp. Salt
¼ Tsp. Poppy Seeds
Optional Drizzle:
½ Tbsp. (7g) Unsalted Butter
Heaping 2 Tsps. (7g) Confectioners Swerve
Instructions
- In a large measuring cup add all of the liquid ingredients, and whisk them until combined.
- Now add the dry ingredients, and mix until they’re well incorporated with the wet ingredients.
- Next, coat an 8oz (240mL) ramekin with baking spray, and add the batter to the ramekin.
- Cook for 30 seconds, check on it, cook for another 30 seconds, check on it again, and cook it for 15 more seconds if needed.
- While the mug cake is cooling, make the optional glaze.
- In a small dish add all of the ingredients, and mix until combined.
- Add the glaze to the mug cake once the cake has cooled, and serve.
