This shrimp stir fry is an easy one pan meal that is so healthy and so delicious. It features shrimp and an array of fresh veggies mixed in a tasty homemade stir fry sauce. And the best part is it takes under 20 minutes to make!

Ingredients

1/4 cup Low Sodium Soy Sauce or Tamari

1 Tbsp Toasted sesame oil

1 Tbsp chili sauce, like sambal oelek

2 Tbsp brown sugar

4 garlic cloves, minced

1/4 cup water

1 Tbsp vegetable oil

1 red bell pepper, thinly sliced

  1. Add the soy sauce, sesame oil, chili sauce, brown sugar, garlic, cornstarch and water to a small bowl and whisk to combine. Set aside.
  2. In a large skillet or wok set over medium-high heat, heat the oil, until it glistens. Add the bell pepper, asparagus and snow peas. Cook, stirring occasionally, for 3-4 minutes. Add the shrimp and sauté until they turn pink, about 3-4 minutes longer.
  3. Add the sauce to the pan, simmer for 5 minutes, stirring occasionally until the sauce has thickened slightly and the shrimp and veggies are fully coated in the stir-fry sauce.
