These protein pancakes are a quick and delicious way to jump-start your day. They're made with protein powder and just 5 simple ingredients. Plus, they come out so pillowy and fluffy you'd never know they're healthy pancakes. Oh, and best of all, they're ready in about 15 minutes!

Ingredients

1 Cup (226g) 1% Fat Small Curd No Salt Added Cottage Cheese

6 (210g) Egg Whites

6 Tbsps (42g) Coconut Flour

1 Scoop (30g) Vanilla Whey Protein Powder

1 Tsp Baking Powder

1 Tsp Vanilla Extract

Instructions

  1. Add all ingredients to your blender. Blend until smooth
  2. Once smooth turn your stove up to medium heat, coat a pan with baking spray, and add your batter.
  3. Cook the pancake for a few minutes and flip once bubbles start to appear on the top of your pancake
  4. Cook for another 2-3 minutes and remove from the pan. Top with my sugar free maple syrup and enjoy!
