Chocolate Covered Strawberries That Are Keto & low Carb
So, today's recipe is definitely not one that you'd normally think of as a keto or low carb.
I mean, come on, chocolate covered strawberries keto?! No way, Jose.
But, it's true!
This recipe is totally keto, and totally low carb.
Actually, we won't even be adding ANY net carbs to these strawberries adding the chocolate to them. More on that a little later.
Anyways, these chocolate covered strawberries taste anything but "healthy".
Seriously, when you bite into these chocolate covered strawberries, you'll have no idea they're low carb keto chocolate strawberries.
The juiciness and sweetness of the strawberries just pairs so perfectly with the chocolate.
And the chocolate is perfectly sweetened.
It's rich, bold, and decadent! And, again, no added net carbs!
I'm actually pretty sure - not totally sure though lol - that if you make these for somebody, they instantly fall in love with you.
Basically what I'm saying is that these chocolate covered strawberries are A MUST for Valentine's Day.
How To Make Chocolate Covered Strawberries Keto & Low Carb (Video)
Like I mentioned earlier, these are some easy to make chocolate covered strawberries!
Ingredients You'll need
In fact, so easy that you'll only need 2 ingredients besides strawberries to make them...
- No Sugar Added Chocolate Chips (These ones have 0 NET CARBS)
- Ghee or Butter
However, if you can't find those chocolate chips - or don't want to buy them - you could also use a combination of these ingredients instead...
- Baker's Chocolate
- Confectioners Swerve
- Salt
- Ghee or Butter
Instructions
Ok, those ingredients are simple enough, now let's talk about the instructions.
Which, by the way, are also very simple!
- Wash and dry the strawberries.
- Melt the chocolate chips and ghee together either in the microwave or stove.
- Dip the strawberries into the chocolate sauce, and then set them on a baking sheet lined with parchment paper.
- Refrigerate the strawberries for about 15 minutes (until set).
That said, if you're using the Baker's Chocolate method instead, you'll want to melt it with the ghee first, and then sift the Confectioners Swerve into the melted sauce.
By the way, sifting it just helps the Swerve dissolve easier into the sauce.
Oh, and dipping the chocolate covered strawberries into some crushed nuts is always a delicious add-on as well. So, if you want to do that, just make sure to dip them into the nuts before refrigerating them.
No Sugar Added Chocolate Covered Strawberries
The reason that this is a no sugar added chocolate covered strawberry recipe is simply because of the chocolate.
Both chocolate options I listed above have no sugar added to them.
The first option - the chocolate chip option - is sweetened with erythritol and stevia.
And the second option the Baker's chocolate option, is sweetened with Swerve.
That said, if you go with the second option, make sure you use Confectioner Swerve with it.
You don't want to use Stevia - or other sweeteners for that matter - because they're typically much sweeter than Swerve.
Or, worse, they're actually blended with sugar.
Most Stevia products are "blends".
And typically the "blends" are mostly sugar - aka maltodextrin, dextrose, etc. - mixed with a tiny amount of Stevia.
So, I discourage using those.
Also, pure erythritol isn't as sweet as Swerve. A lot of people think they are interchangeable, but they aren't.
Swerve is as sweet as sugar, and pure erythritol is only 70% as sweet as sugar.
Basically, FOR BEST RESULTS, just use the Swerve.

Notes
The Macros DO NOT include the "carbs" from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list "sugar alcohols" as carbs, but that doesn't mean they should be tracked as such. That's why it's ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES.
