Can you tell I've been on a protein truffle kick lately?
Is it really that apparent?
I think I might have developed a protein truffle obsession. I can't get enough of these lately, and I'm totally ok with that.
5 things you need to know about these:
- Bet you can't eat these without smiling (I couldn't anyways)
- You'll have a hard time believing these are "protein" truffles
- If you do roll the outsides in peanut flour...don't forget to grab some milk
- Add your coconut oil in 1 teaspoon at a time (protein powders vary in consistency so you may need more or less to form your truffles)
- If you'd like the truffles to harden up a bit, just refrigerate them for 30 minutes or so

- Prep Time: 10 mins

Ingredients
- 4 Tbsp (24g) peanut flour
- 2 Tbsp (30ml) water
- 1 Scoop (30g) fudge brownie whey protein
- ½ Tbsp (6g) sugar substitute
- ½ Tbsp (2.5g) unsweetened cocoa powder
- 1 Tbsp (14g) melted coconut oil
Instructions
- Add all ingredients into a small bowl
- Mix with a small spatula until crumbly
- Once crumbly use your hands to form a large ball of dough
- Break off 11 even pieces and roll into small balls
- Optional: coat the outsides in peanut flour
