    Banana bread! This healthy banana bread recipe is so easy to make, and perfect for weight watchers. It's a low calorie, low carb, high protein banana bread recipe that EVERYONE is sure to love!

    Ingredients

    Scale
    • 3 Mashed bananas (300g)
    • Vanilla Whey Protein Powder (45g) 1 ½ Scoops
    • Coconut Flour (50g)
    • Eggs (2 extra large)
    • Egg Whites (140g or 4 egg whites)
    • Baking Powder 1 tsps
    • Calorie Free Maple Syrup (60g)
    • Cinnamon 2 tsps
    • Crushed Walnuts (30g)

    Instructions

    1. Preheat your oven to 350 Degrees | 177 Celsius
    2. Add all the ingredients to a medium sized bowl (except for the walnuts)
    3. Cover a normal sized loaf pan with parchment paper and coat it with baking spray
    4. Add the batter to the pan
    5. Bake at 350 for about 40 minutes

      Hi Joe. I did the banana bread and it was great. One thing to ask. When it was cooking in the oven, it was raising perfectly because of the baking powder. But it deflatted when I took it out. Why is that. Do you have any idea? Thanks

        Hey Ali!! Sorry it took me a couple days to get back to you. I'm not sure why that might have happened, it's never happened to me before when making this bread.       This banana bread is great, tasty, moist and fluffy.
      I followed the recipe but I substituted the Whey protein powder for a vegan protein powder, the maple syrup for brown sugar(very little), and the walnuts for pecans. I had to bake it for 1 hour and 10 minutes, maybe because I replaced the ingredients or because I used a glass loaf pan.
      Next time I'll try it with almond flour.

      Makes one loaf and nutrition info is for one slice. How many slices are in the loaf please? And sorry if it is in there but i skimmed over it!

      I really enjoy this recipe. Obviously, it has a slightly different texture as it's very egg based, but it is great for staying in my macros and I don't feel bad about how satisfying it is. I make one on Sunday, slice, and wrap the pieces individually in the fridge to grab and go for the week. Amazing pre or post workout snack!
