Making protein truffles is officially my favorite way to use protein powder.
If you love the combination of chocolate and coconut, think Almond Joy candy bars, then do yourself a favor and make these! You're future self will thank you, I promise.

Healthy Almond Joy Protein Truffles

Ingredients
- 1 Scoop (30g) chocolate whey protein
- 2 Tbsp (24g) sugar substitute
- 2 Servings (6 Tbsp) (30) shredded coconut
- 1 Tbsp (15ml) coconut oil
- 2 Tbsp (30ml) low calorie/calorie-free chocolate syrup
Instructions
- Add all the ingredients to a small bowl (except for ½ a tablespoon (7g) of the shredded coconut)
- Combine until a solid ball forms
Note: Depending on the protein powder you use it can change the consistency of your chocolate ball. Add chocolate syrup in ½ a tablespoon (7ml) at a time until consistency from the video is achieved.
Notes
2 Weight Watchers SmartPoints
*There was a mistake in the video it says 1 ⅔ tablespoon shredded coconut and was supposed to say servings. This roughly translates to 22g of shredded coconut.
The ½ tablespoon of shredded coconut was supposed to say ½ serving as well. This roughly translates to 8g of coconut.
