    Gah, banana bran muffins take me way back to being a little kid. That's because my mom used to make them when she'd go on one of her infamous diets. Ah I used to love eating them...for breakfast, lunch, as snacks after school, and even sometimes for dinner when she didn't feel like cooking.

    Well these muffins definitely rival mom's. They have this gooey banana filled inside that compliment the chewy baked exterior perfectly. Plus, each one packs 7.5g of fiber.

    If bran muffins are your thing, then these will not disappoint.

    Healthy banana bran muffins

    Ingredients

    • 1 ¾ cup (100g) wheat bran
    • ½ Cup (40g) oats
    • 1 ½ Tbsp (18g) sugar substitute
    • ½ Tbsp (5g) ground cinnamon
    • 1 Tsp baking powder
    • Pinch of salt
    • 2 mashed bananas
    • ½ Cup (122g) unsweetened applesauce
    • ½ Cup (113g) non-fat greek yogurt
    • 1 Egg & 2 egg whites
    • 1 Tsp of vanilla extract

    Instructions

    1. In a medium sized bowl add
    2. (1 ¾) Cup (100g) wheat bran
    3. (½) Cup (40g) oats
    4. (1 ½) tablespoon (18g) sugar substitute
    5. (½) tablespoon (5g) ground cinnamon
    6. (1) teaspoon baking powder
    7. Pinch of salt
    8. Combine and set aside
    9. In a separate bowl get together your wet ingredients
    10. (2) mashed bananas
    11. (½) Cup (122g) unsweetened applesauce
    12. (½) Cup (113g) non-fat greek yogurt
    13. (1) Egg & 2 egg whites
    14. (1) teaspoon of vanilla extract
    15. Mix thoroughly
    16. Pour wet into the dry and combine
    17. Pour batter into a well greased muffin tin and fill the tins to the top
    18. You should end up with about 7 muffins
    19. Bake at 350 degrees | 177 Celsius for 45-50 minutes
