Alyssa and I were doing work at a local coffee shop a few days ago. She was busy making lesson plans (a weekly duty for most teachers), and I was "Diet Cheffing" as she likes to call it. Anyways, this place is known for having amazing chocolate scones, and of course Alyssa got one...I mean, why wouldn't you when you can eat anything, and still have a six pack.
Ok, ok, I might be a tad bit jealous.
I opted for just a bite of the scone, since these kinds of desserts are typically macro-killers.

For example, one chocolate chip scone from Starbucks has over 400 calories, and nearly 20g of fat. No thank you!
So I started wondering how I could reverse engineer a scone into being healthy. And then it hit me...my extremely popular two ingredient biscuit recipe could easily be altered into a scone. Coconut flour was the first ingredient I thought of to give the scones their dry crumbly sconey texture. Then all I needed to do was figure out the amount of protein powder & sugar substitute I'd need, and boom, healthy chocolate chip protein scones were born! Of course I just made it sound a heck of a lot easier than it was, but hey, it was still pretty easy.

Healthy Chocolate Chip Scones (High Protein)
Healthy, high protein chocolate chip scones!

Ingredients
- 1 ¼ Cups (150g) Self Rising Flour
- 1 ½ scoops (45g) Isopure Vanilla whey protein
- ¼ Cup (30g) coconut flour
- 2 ½ Tbsp (30g) sugar substitute
- Just less than 1 cup (200g) of non-fat greek yogurt
- 3 Tbsp (36g) semi-sweetened mini chocolate chips
Instructions
- Add the first 4 ingredients into a large bowl and mix well
- Hollow out a small circle in the middle of the bowl and add in the yogurt
- Pull the flour into the yogurt with a spoon or spatula until crumbly
- Once crumbly add in 1 ½ tablespoon (18g) semi-sweetened mini chocolate chips and form into a ball
- Transfer the dough onto a baking sheet lined with parchment paper and press out a ¾ inch high circle with the dough
- Add the remaining chocolate chips to the top of the dough and bake at 375 Degrees | 190 Celsius for about 10 minutes
