It has been hot, hot, hot, here in Buffalo lately.
Luckily, I've some amazing frozen greek yogurt brittle to keep me cool.
My favorite thing about this brittle is how fast & easy it is to make. It literally takes less than 5 minutes to put together. The hard part is waiting for your greek yogurt brittle to finally freeze (which takes about 2 hours). I'm fairly positive on these hot summer days it's the longest two hours of my life.

This is also one of those, "flavor combinations are basically endless" kind of recipes. However, I prefer the fairly conventional, pistachio and freshly sliced strawberry combination though.

Ingredients
- Ingredients and Instructions:
- ½ Cup of Non-Fat Greek Yogurt
- ¾ Tbsp (9g) Sugar Substitute
- 1Tbsp (15mL) Unsweetened Vanilla Almond Milk
- 2 sliced fresh strawberries (35 grams)
- 1 Tbsp (10g) chopped up salted pistachios
Instructions
- Ingredients and Instructions:
- (½ Cup) of Non-Fat Greek Yogurt
- (¾ Tbsp) (9g) Sugar Substitute
- (1Tbsp) (15mL) Unsweetened Vanilla Almond Milk
- Mix until well combined
- Once well combined thinly spread mixture over baking sheet covered with parchment paper
- Add you toppings of choice
- I added 2 sliced fresh strawberries (35 grams)
- and (1 Tbsp) 10g chopped up salted pistachios
- Freeze for around 2 hours
- Serve immediately
