    Ingredients

    Scale
    • 3 Tbsps (48g) Natural Peanut Butter
    • 1 Tbsp (12g) Erythritol
    • 1 Egg
    • ½ Tsp Baking Powder

    Instructions

    1. Add all of the ingredients listed above into a small bowl
    2. Mix until well combined and smooth
    3. Now coat a ramekin with baking spray
    4. Add the batter to the ramekin 
    5. Microwave for 30 seconds to 1 minute
    6. *Microwave times will vary depending on the power of your microwave

    Mug cake cook times will vary. My microwave is 700 watts, and turns out perfect at a 1 minute cook time. Make sure you adjust the cook time depending on the power of your microwave.

      Oh my goodness! I don't like mug cakes, at all, but this one is actually really good! I made some keto whipped cream in my NutriBullet to top it off and had a delicious treat in less than two minutes! Definitely satisfies my sweet tooth and peanut butter craving.

      Super yum! I used Natural chunky peanut butter room temp and a teaspoon of cocoa then once cooked cut out a small slice and poured a little 35 cream in the bottom to be soaked up in the cake. Sooo easy and exactly the consistency of a cake.

      Best Mug Cake Ever! I am not even a fan of mug cakes but this one is the peanut butter bomb! I love it! So easy to make and for an extra treat I sprinkle a few Lily’s semi sweet chocolate chips on top Right after the microwave and they melt oh so gooey and drip in every bite!       Thank you! Thank you! Thank you! I make so many of your wonderful keto recipes, but this one is a favorite and I make it at least twice a week. I split the recipe into 2 servings because I find it really filling. I slice each little cake in half and add a little layer of a quick homemade berry compote (just whatever berries i have on hand with some erythritol and xantham gum) so, it's a deeeelicious PB&J cake!! YUMMM!!! It really helps me stick to Keto and satisfy my sweet tooth while I continue to effortlessly lose weight. (This from a woman who ate 2 donuts a day, every day, for most of my life)
