Honestly, my kids even love these brownies...so much so that they insist on helping me make them. I think that's just so that they can lick the spatula after we pour them into the baking pan though.
On top of how delicious these brownies are they're also pretty good for you. With only 5 grams of sugar and up to 6 grams of protein per brownie, this naturally sweetened brownie recipe will curb all of your chocolate cravings in a guilt free way.

This recipe uses oat flour, but if you don't have any on hand, you can blitz some dry oats in a blender until powdered. Alternatively, you can use all-purpose or whole wheat flour with negligible change in calories and carbohydrates.

Anyway, here's everything you'll need:
- ¾ cup cottage cheese
- 2 eggs
- 1 teaspoon vanilla extract
- 2 tbsps. butter, melted
- ½ cup cocoa powder
- ½ cup powdered allulose
- ¾ cup oat flour
- 1 tsp. baking powder
- ½ cup chocolate chunks
Pretty basic stuff, right?!
By the way, you can completely customize this recipe with additional add-ins like sugar free chocolate chips (my personal fave), nuts, marshmallows, or chopped pretzel bits.
How to Make Cottage Cheese Brownies
Again, these cottage cheese brownies couldn't be easier to make.
All you have to do is a little blending, mixing, pouring, and baking. The hardest part of the whole process is waiting for them to cool!
Step One: Prep
First things first, you'll want to preheat your oven to 350°F (175°C).
Then, take out an 8x8-inch baking dish, line it with parchment paper, and set it aside.
Step Two: Make the Brownie Batter
Add the oat flour, cocoa powder, powdered allulose, and baking powder into a large mixing bowl and whisk until well combined.
Next, blend the cottage cheese, eggs, and vanilla extract in a blender or food processor until smooth. As you blend, scrape down the sides with a rubber spatula as necessary.
Once that's done, pour the cottage cheese mixture and completely melted butter into the bowl with the dry ingredients and stir until they're fully combined.
Lastly, gently fold in the chopped chocolate chunks.
Step Three: Bake
Pour the brownie batter evenly into the lined baking dish and bake in the oven for 20-25 minutes or until the brownies are fully cooked.
You'll know they're ready when you can slide a knife into the center of the batter, and it comes out clean.
Step Four: Slice and Serve
Take the pan out of the oven and let it cool completely. Make two horizontal cuts and two vertical cuts to divide them into 9 brownies.
One last thing, I love to serve these brownies warm with a sprinkle of flaky sea salt, or even with a scoop of protein ice cream. The combination of flavors is out of this world!

This recipe makes 9 brownies...and I'm not going to lie; they're all usually devoured by my family the day I make 'em.
However, I like to make a double batch since they're so easy to store. That way, we have some healthy brownies on hand all week long.
Anyway, as far as storing the brownies goes, you'll want to transfer the cooled brownies into an airtight container and then keep them in the fridge. Stored like this, they'll last for up to 4-5 days.
They also keep well in the freezer. Store the brownies in a freezer bag - or freezer-safe container - with a piece of parchment paper under each one to prevent sticking. They'll stay good in the freezer for up to 3 months.
How to Reheat Cottage Cheese Brownies
These brownies are great straight out of the fridge, but they're even better warmed back up.
To reheat 'em, just put them back in your oven for 5 minutes at 350°F. With that temp/time the interior of the brownie should be warm and the edges should be crispy.
In a pinch, you can also heat them in the microwave on a microwave-safe plate for 10-15 seconds. This is the quickest way to get the job done, but it won't have the best results in terms of texture.
