MY TAKE ON LOW CALORIE CHOCOLATE CAKE
If you loved my low calorie chocolate mug cake recipe you're going to love this full-sized version of it!
That's because this healthy chocolate cake recipe has only 70 calories and only 3 grams of fat per slice, yet tastes miles ahead of any other "healthy" cake recipe out there. In fact, it rivals even the best boxed cake mixes out there.
Yup, it's that good.
But, this cake doesn't just taste incredible, it's also so, so easy to make. Just a few simple steps are needed, and the oven does most of the work.
And you know what the best part is? Not only do I love this recipe, but so does my whole family. Even my kids love it, which should really tell you something.
By the way, if you need another chocolate cake recipe that packs some protein, definitely give my chocolate protein cake a try next. It's just as easy to make, but it crams a whopping 20 grams of protein per slice!
Joe Tip (kind of like "pro tip" but better): You can easily make this recipe suit your needs. If you prefer your cake to be gluten free, simply use gluten free flour. Likewise, if you need a vegan cake, use one of my favorite high protein dairy free yogurts, and swap the eggs for an equal amount of dairy free yogurt.
INGREDIENTS
When I said the ingredient list was simple, I meant it.
In fact, if you like to bake as much as I do, then you probably have all the ingredients you'll need to make the cake on hand already!
Anyway, here's what you'll need to make it:
- 2 large eggs
- ½ cup Swerve (or any granulated sweetener that's as sweet as sugar)
- ⅔ cup full fat greek yogurt (5%)
- ½ teaspoon vanilla extract
- ½ cup +1 tablespoon AP flour
- ⅓ cup unsweetened cocoa powder
- 1 tablespoon baking powder
And here's what you'll need to make the chocolate frosting:
- ⅔ cup + 2 tbsp Greek yogurt
- 4 tablespoon unsweetened cocoa powder
- 6 tablespoon powdered sugar substitute (0 calorie icing sugar)
Pretty simple stuff, right?!
HOW TO MAKE LOW CALORIE CHOCOLATE CAKE
Now that we've gone over our ingredients, let's talk about how to make the cake!
And again, I can't stress enough just how easy this low calorie chocolate cake recipe is to make. All you have to do is mix the batter, pour it into a cake tray, and let it bake while you make the frosting.
It'll take you longer to preheat the oven than to do anything else!
So, with that said, let's stop wasting time and bake a cake!
STEP ONE: PREP THE FROSTING
First off, start by preheating the oven to 350°F (180°C) and line an 8-inch cake pan with parchment paper.
Next, since the frosting has to set in the fridge for a little while, it should be made first.
To make the frosting, grab a bowl and add the yogurt, cocoa powder, and powdered sweetener to a bowl. Whisk until combined and smooth.
If the frosting is too thick, add a splash of unsweetened almond milk. Once it reaches a desired consistency, store it in the fridge to firm up.
STEP TWO: MAKE THE CAKE BATTER
While the frosting sets, grab a second bowl and add the eggs and granulated sweetener. Use a hand mixer to beat the mixture until it's light and fluffy. Then, mix in the yogurt and vanilla extract.
Once the wet ingredients are fully combined, sift in the flour, cocoa powder, and baking powder. Use a spatula to fold in the dry ingredients until well combined.
STEP THREE: BAKE THE CAKE
Pour the cake batter into the prepared cake pan. Then, transfer it to the oven and bake the cake for 25-30 minutes or until a toothpick inserted comes out clean.
Let the cake cool briefly in the cake pan, then move it to a wire rack and let it cool completely in the fridge.
Once it's cold, spread the frosting on top of the cake, and optionally, garnish it with a dusting of cocoa powder before slicing.
HOW TO STORE LOW CALORIE CHOCOLATE CAKE
This low calorie chocolate cake recipe makes an 8-inch cake - which will make about 8 normal slices.
I find this to be the perfect amount for a party or as dessert after dinner. That said, it's easy to whip up a double batch. That way, you can either make a layered cake or have plenty of leftovers.
Speaking of leftovers, if you have any, you can store them in an airtight container in the refrigerator for up to 5 days.
However, if you want to keep your cake fresher for longer, you can freeze it in a freezer-safe container for up to 3 months. Then, when you're ready to enjoy it again, just let the cake thaw overnight in the fridge
FAQS ABOUT THIS LOW CALORIE CHOCOLATE CAKE RECIPE
CAN I MAKE THIS RECIPE AHEAD OF TIME?
Yes! If you want to make your cake ahead of time, I suggest baking it and then storing it in an airtight container. Keep it at room temperature for up to 2 days or in the refrigerator for up to 5 days.
Having said that, since the frosting contains dairy, I recommend keeping it fresh and making it right before you're ready to serve the cake.
FINAL THOUGHTS
Well, that's how to make my favorite low calorie chocolate cake recipe!
As far as cake recipes go, I can safely say this one is the easiest, most foolproof low calorie one you'll find.
Plus, unlike other healthy cakes, mine actually tastes as good - dare I say better - than "regular" chocolate cake.
