    Healthy Banana Nut Muffin Recipe

    It seems like forever ago since I've made a recipe...

    So I'd like to think that today's Healthy Banana Nut Muffin Recipe is me coming back with a bang! I'd even go as far as saying that these muffins might be my best muffin recipe yet.

    These muffins are fluffy and moist, and I'm fairly certain that if you're nice enough to let somebody have one they won't even believe they're healthy. That's because every muffin is jam-packed with some serious banana flavor and lightly sweetened with a touch of honey. And the craziest thing of all is that each one is only 160 calories - I still don't know how that's even possible.

    Oh yeah, did I mention how easy these muffins are to make?!

    All you need to do is blend and bake these banana nut muffins. That's right, you don't need any bowls, or whisks for this one - which means clean-up is a cinch. And I'm all for recipes that involve as little clean-up as possible - it's the worst part about cooking anything isn't it?

    The best easy and healthy Banana Nut Muffin Recipe you'll EVER try! This is one of my go-to clean eating recipes - every muffin just turns out incredibly moist and delicious.

    Ingredients

    Scale
    • 3 Extra ripe bananas (325g)
    • 2 Eggs
    • 2 Tbsps (30g) coconut oil
    • ¼ Cup (80g) honey
    • 1 Tsp vanilla
    • 1 ¾ Cup white whole wheat flour (210g)
    • 1 Tsp cinnamon
    • ½ Tsp nutmeg
    • ½ Tsp baking soda
    • ¼ Cup (28g) chopped walnuts

    Instructions

    1. Add all ingredients to a blender and blend until smooth
    2. Coat a (12 muffin) muffin tray with non-stick baking spray and evenly distribute the batter between each mold
    3. Top each mold with chopped walnuts
    4. Bake at 375 Degrees or 190 Celsius for 12-14 minutes
