    I have the PERFECT summer time blueberry muffin recipe for you!

    I'm seriously obsessed with this recipe. And it must be a good one given the Youtube feedback it's been getting. You can make these "normal" blueberry muffins, or you can make them totally summery and use reduced sugar orange juice. I'd go the orange juice route, especially during the summer.

    Low fat, high protein blueberry muffins

    Ingredients

    Scale

    Wet Ingredients:

    • 1 Cup (¼ liter) reduced sugar OJ
    • 1 Medium sized banana (100g)
    • ⅓ Cup (90g) unsweetened applesauce
    • 2 Egg whites (70g) egg substitute
    • ¼ tsp Vanilla extract

    Dry ingredients

    • 1 ½ Cups (180g) self rising flour
    • 2 Scoops (60g) Vanilla whey protein powder
    • 1 Tbsp (12g) sugar substitute
    • Pinch of salt

    Instructions

    1. In a blender add all wet ingredients
    2. Blend Well

    Dry ingredients

    1. In a medium sized bowl add your dry ingredients
    2. Mix to combine

    Method

    1. Add wet into dry and mix until smooth
    2. Add batter to a muffin tin coated in baking spray
    3. Bake @ 350 degrees for 20-25 minutes
