    These chocolate chip pumpkin spice cookies are chewy, gooey, and most of all healthy.

    They're literally the perfect fall treat. Especially if you want to indulge in the amazing flavors of fall, without ruining your diet.

    The best part about these chocolate chip cookies, is the fact that each one is ONLY 70 calories! However, the second best thing, is just how much pumpkin-licious flavor is jam packed into each one.

    The BEST tasting HEALTHY chocolate chip pumpkin spice cookie you'll ever make.

    Ingredients

    Dry

    • 1 ¼ Cups (100g) quick oats
    • ⅓ Cup (45g) whole wheat flour
    • 2 Scoops (60g) Isopures vanilla whey protein powder
    • 2 ½ Tsp of pumpkin pie spice
    • 1 Tsp cornstarch
    • ½ Tsp baking soda
    • ¼ Tsp of salt
    • 3 Tbsp (42g) semi-sweetened mini chocolate chips

    Wet

    • ¾ Cup (183g) pure pumpkin
    • ½ Cup (118mL) calorie-free/low calorie maple syrup (I used Walden Farms)
    • 2 Tbsp (28g) melted coconut oil
    • 1 Tsp of pure vanilla extract

    Instructions

    1. In a medium sized bowl mix and combine all dry ingredients (except chocolate chips)
    2. In another medium sized bowl mix and combine all wet ingredients
    3. Pour wet into dry and combine
    4. Now add in half of your chocolate chips and combine (do not over mix)
    5. Coat a baking tray with non-stick spray and use a cookie scoop to make uniform cookies
    6. Use a spatula to flatten your cookies
    7. Add the last half of your chocolate chips by hand
    8. Bake at 325 degrees or 162 Celsius for 12-15 minutes
