    Healthy Espresso Banana Bread

    This healthy and easy Espresso Banana Bread has only 130 calories, but packs 10g of protein per slice!

    Ingredients

    • 2 ½ (250g) Ripe bananas
    • 1 Egg
    • ½ (122g) Cup unsweetened applesauce
    • 1 (90g) Cup oat flour
    • 3 (90g) Scoops vanilla whey protein powder
    • Heaping ⅓ cup (75g) sugar substitute
    • 3 (12g) Tbsps instant espresso
    • 1 Tsp baking soda
    • ¼ Tsp baking powder
    • Pinch of salt

    Instructions

    1. Add all ingredients to a large bowl
    2. Use a hand mixer and mix until everything is well combined
    3. Once well-combined coat a 9x5 loaf pan with a GENEROUS amount of baking spray
    4. Add your batter to the pan and bake at 350 Degrees | 177 Celsius for 25 minutes
    5. After 25 minutes cover the pan with tin foil and bake an additional 10 minutes (or until a toothpick can be cleanly taken out of the middle of the loaf)
    6. Let the loaf cool (and leave the tin foil on during the cooling process)
