    I can't believe I've been doing this healthy cooking thing for a year now. Seriously, I can't.

    The Diet Chef has changed so much since I came out with my very first recipe video last Novemeber...grilled cheese.

    Agh, it's cringe worthy I know. I think the part where the ingredients are just sitting on the counter is so exciting, don't you? Haha.

    Instead of doing the typical birthday cake recipe, I thought it'd be kind of fun to make healthy pumpkin pie. Plus, the timing couldn't be any better, it's fall, and Thanksgiving is now just a week away here in the United States.

    Now, I do realize that I've done quite a few pumpkin recipes lately, but this pumpkin pie is the last one for the season. So with that being said lets go out with a bang!

    Healthy pumpkin pie!

    Ingredients

    Scale
    • 1 ¾ Cup (420g) Pure Pumpkin
    • 1 ½ Cups (355mL) evaporated fat-free milk
    • 3 Egg whites (105g)
    • 1 Egg
    • ½ Cup (100g) Sugar Substitute
    • 1 ½ Scoops (45g) De Novos white cake protein powder
    • 2 Tsp pumpkin pie spice

    Instructions

    1. Add all the ingredients to a large bowl
    2. Use a hand mixer to combine thoroughly
    3. Pour the batter into an 8 inch circular pie plate coated with baking spray
    4. Bake at 350 Degrees | 177 Celsius for 45 minutes

      The first ingredient you have listed is just 420grams, but you don't say what the ingredient is. :(

      I made your banana cake but I used sweet potatoes instead - turned out amazing!!! I don't take pics because I'm not sure how to upload them to you.

        Thanks for the heads up! I fixed it...it was supposed to say pure pumpkin. That cake is awesome :D Glad it worked out well for you too!

      How many slices are you cutting to get these macros per slice? I come from a large family & there is no standard cutting portion. In the recipe, we carefully measured everything else, now I want to enjoy, but not too much of course. Thank you.

      Baked this yesterday, and it turned out really well! Thanks for another great recipe!

      Took a photo of my pie and tagged you on Instagram so you can have a look! It's not quite as pretty as yours, but hey practice makes perfect right? (As if I needed an excuse to bake this again!)

      Joe is there a substitute for the De Novos white cake protein powder? I am in Canada and need to make this for Saturday not a lot of time to get special ingredients
