Overnight Oats are literally the perfect breakfast for those mornings where you don't feel like cooking, cleaning, or maybe even thinking.
You know the mornings where you roll out of bed and are still kind of sleeping - but unfortunately 100% awake - and the thought of making an actual breakfast seems like some sort of daunting impossible task?
Yeah, Overnight Oats are perfect for those kinds of mornings.
For me, these mornings usually consist of me walking around my apartment with my eyes closed for an extended period of time pretending I'm not actually awake.
However, this "sleep-walking" game usually ends when I have to get something together for breakfast. And, to be honest, I don't mind slowly waking up while I make breakfast, it's the cleaning up after I make it that's just such a downer.
Thankfully, there's little-to-no clean up with this Peanut Butter Overnight Oats recipe - and the not having to cook part is just a big bonus!
Also, with that said, I really love a few things in particular about these Overnight Oats:
First of all, I'm a peanut butter addict. So, I love all things peanut butter, and these oats don't disappoint in the PB department.
Next, I love how thick this Overnight Oats recipe gets without using chia seeds.
Finally, the recipe isn't sweetened with sugar, but honey, and there are few combinations in this world more delicious than peanut butter and honey.

Ingredients
- ½ Cup (40g) oats
- ½ Cup (48g) peanut flour
- ½ Tsp cinnamon
- ½ Cup (120ml) milk of choice
- 1 ½ Tbsps honey (17g)
Instructions
- Add all ingredients to a small bowl and mix well
- Transfer oats to a sealable jar
- Seal and store in the fridge for 6-8 hours
