Keto Salmon Sandwiches
Today's Keto Salmon Sandwich Recipe is sure to get you out of your same old low carb lunchtime rut.
I don't know about you, but a lot of times I find myself eating the same thing over and over again for lunch.
Mostly that consists of hardboiled eggs, ground turkey, avocado, and hot sauce.
And while that combo does the job most days, sometimes you've just got to switch it up!
So, that's where today's low carb sandwich recipe comes in.
Of course, the first thing you need to make a sandwich is bread. So, I'll be using my 2 Minute Keto Bread Recipe as the vehicle for all of this salmon sandwich deliciousness.
And as far as the salmon goes, I'll be using a couple of these incredibly convenient Lemon & Dill Salmon Creations Packets by Starkist.
Now, these packets are a great low carb keto option by themselves. As you'll see below, each packet has less than 1 carb.
That said, you can easily add just a few ingredients to them and make them a whole different level of delicious.
Today, we're doing that by adding...
- Fresh lemon juice
- Fresh dill
- Crushed black pepper
- & Some creamy mayo
Once we mix our salmon up the rest is simple!
We're going to toast our bread, add a slice of lettuce to it, top the lettuce with the salmon, and garnish the salmon with sliced cherry tomatoes.
Bada-bing-bada-boom, we've just made open-faced keto salmon sandwiches in record time!
Well, 15 minutes time anyways.
How To Make Keto Salmon Sandwiches Without Bread
Ok, so if you're really on the go, and you to make these sandwiches as fast as possible you can skip the bread altogether.
And if you decide to ditch the bread, using a large leaf of lettuce in its place works wonderfully.
Or, for a more starchy option, you could fill a scooped-out portabella mushroom with the salmon too.
Using zucchini in place of bread can work great as well. Either by making tiny sandwiches out of slices of zucchini, or by slicing the zucchini horizontally, and making zucchini boats with the salmon.
Lastly, you can just eat it as is. Since it's absolutely delicious on its own.
If you do that though, I highly recommend pairing it with some of my keto crackers.
Adding a bit of crunch to the mix will just make this Keto Salmon Creation that much better!

Ingredients
2 Starkist Lemon & Dill Salmon Creations Packets
3 Tbsps (45g) Mayonnaise
1 ½ Tsps (10g) Fresh Lemon Juice
1 ½ Tsps Fresh Dill Weed
Fresh cracked pepper to taste
Optional:
4 Cherry tomatoes (25g) As A Garnish
California Lemon Peel Add Into The Salmon To Taste
2 Minute Keto Bread Ingredients:
½ Cup (112g) Blanched Almond Flour
½ Scoop (30g) Unflavored Whey Protein
½ Tsp (4g) Confectioners Erythritol
Heaping ½ Tsp (2-3g) Baking Powder
¼ Tsp Xanthan Gum
Heaping ½ Cup (140g) Water
Instructions
The first thing you'll want to do is make the bread.
Making The Bread:
So, to do that, add all of the "bread" ingredients to a medium sized bowl.
Mix until the ingredients dissolve into one another and a thick batter forms.
Coat a 3 cup Tupperware dish with baking spray, evenly spread out the batter in the dish, and microwave for 1-2 minutes depending on the power of your microwave.
Cook the bread until the top is firm to the touch.
Let the bread cool down in the dish.
Once it's cooled cut it in half horizontally, and then cut those half's in half to make 4 slices.
Toast them until crunchy.
Making The Salmon Filling:
Add all of the ingredients to a small bowl, and mix until combined.
Once combined, add a slice of lettuce to the toast, along with the salmon, and garnish with cherry tomatoes.
Notes
I like to make just 2 "big" open faced sandwiches out of the recipe. And then I'll save the other 2 slices of toast in a zip-locked bag so I can make more open faced sandwiches the next day.
