Ah French toast...
It seriously takes me back to my mom making me breakfast before grade school. It was one of her go-to's in the morning back then...boy I sure do miss having someone make me breakfast 5 days a week.
These French toast roll-ups are a bit healthier than mom's recipe, not to mention, loaded with fiber, protein, and pure deliciousness.

Fit French Toast Roll Ups
Crunchy on the outside...ooooey gooey deliciousness on the inside! Packed with protein

Ingredients
- 4 Slices low calorie bread (weight watchers)
- 2 Tbsp (28g) Fat-free cream cheese
- 2 Tbsp (28g) Low calorie jam
- 1 Egg white
- 1 Tbsp unsweetened almond milk
- Pinch of cinnamon
- Buttered flavored PAM
Instructions
- slices of low calorie bread
- Cut off the crust
- Take a rolling pin and flatten your bread into thin slices
- At the bottom of each roll apply a nice dollop of fat free cream cheese and top it with an equal amount of sugar free strawberry jam (I use 28g or roughly 2 tablespoon of each)
- When your done spreading the filling onto your bread it’s time to roll them up
- Batter
- In a small bowl:
- Add 1 egg white or 35 grams of egg sub
- tbsp almond milk
- And a pinch of cinnamon
- Now give the batter a thorough whisking
- Quickly dip your rolls into your mix ( you don’t want them to get to soggy)
- Set them aside crease side down
- When you’ve given all your rollups an egg bath go ahead and quickly spray them with buttered flavored pam (this will help prevent them from sticking to your skillet
- Add your roll ups to a skillet sprayed with non-stick baking spray
- Cook on medium low heat for several minutes and Use a pair of tongs to gently roll them, and cook all sides
- When the outside reaches golden brown remove your rollups from the pan and top them with some cinnamon sugar, sugar free maple syrup, fresh strawberries, or all three
