Several months ago, my good friend Simon from "The Diet Kitchen" let me make this chocolate chip cheesecake for his channel. It was seriously the kindest thing anyone's ever done for me on YouTube. I had a little less than, or just about, 1,ooo subscribers at the time, and he had over 40,000. Our channels weren't even close in size, but he believed in me, and the quality of my videos and recipes. He gave me my first big break, and it meant a lot to me, probably even more than he thinks.
Anyways, when he gave me this opportunity I knew I had to make something remarkable. And I have to admit, this chocolate chip cheesecake does not disappoint.

The crust to this cheesecake is a bit unique too. It's part chocolate graham cracker, and part Cookies and Cream Quest Bar. Which by the way, is a crazy delicious combination. If you can't find Quest bars (or don't want to use them because they can be expensive), you can just use more graham crackers, and some coconut oil instead. Those substitution instructions will be in the "notes" below.

Healthy Chocolate Chip Cheesecake
Healthy, high protein cheesecake

Ingredients
Crust
- 6 Chocolate graham crackers
- 2 Cookies and Cream Quest Bars
- 4 tbsp of water
Filling
- 8 Oz or 227g of low fat cream cheese
- 185g Non-fat greek yogurt
- 2 Egg whites
- 2 Tbsp or 24g Sugar substitute
- 2 Tbsp or 16g oat flour
- 1Tbsp 15mL lemon juice
- 2 tsp or 10 mL vanilla extract
- Add in 3 Tbsp or 42g of semi-sweetened mini chocolate chips
Instructions
- Take 6 Chocolate graham crackers and blend/process into small crumbs
- Now break up 2 Cookies and Cream Quest Bars into little pieces and place them into a small bowl add 4 tablespoon of water and micro for 30-45 sec (or until the Quest Bars COMPLETELY liquify)
- Now combine your liquified quest bars and crackers
- Once combined add them to an 8 inch springform pan coated with baking spray
- Mold the crust to the bottom of the pan
- *You may need to use a little bit of water on your fingers to help avoid the crust from sticking to them
- Bake at 350 Degrees (177 Celsius) for 15 minutes
- While the crust is baking get together the filling
- With a hand mixer beat 8 Oz or 227g of low fat cream cheese (1-2 minutes)
- Now add in and beat until creamy the following ingredients
- (185g) Non-fat greek yogurt
- (2)Egg whites
- (20Tbsp or 24g Sugar substitute
- (2)Tbsp or 16g oat flour
- Once creamy mix in
- (1Tbsp) 15mL lemon juice
- (2)tsp or 10 mL vanilla extract
- When that's mixed well add in 3 tablespoon or 42g of semi-sweetened mini chocolate chips
- Now add the filling to the spring-form pan
- Bake at 350 Degrees (177 Celsius) covering the cheesecake after 15 minutes with tin foil, and continue baking for another 10 minutes
- Let cool for 25 minutes and refrigerate for 6-8 hours
Notes
If you don't have Quest bars use this for your crust:
2 Cups finely ground graham crackers
3 Tbsps (48g) melted coconut oil
