Alright guys, a couple of weeks ago I showed you how to make your very own healthy pie crust. However, I didn't explicitly show you how to make the protein pudding filling for the crust. If you somehow found your way here, but missed the crust recipe, you can find it (here).
That's what today's blog post is about...
I'm sure some of you have wondered which one of my recipes is my favorite. Well, it's this one. I have easily made this recipe more times than any of my other ones. And that's not to say the other ones aren't great, it's just that this one is sooooo good. I mean really, really good. Especially if you like chocolate, and even more so if you if you like chocolate pudding. Plus, the macros being basically unreal helps too.
Now, this chocolate pudding filling is made with pudding mix, but some of you guys internationally won't be able to find this product. Don't worry though, a while back I made a fantastic chocolate pudding recipe without the mix. You can check that recipe out below. It should work great as a filling for your pie, but I'd add some extra chia seeds just to thicken it up a bit.

Ingredients
- 1 Scoop (30g) Isopures Chocolate Whey Protein
- 1 Packet sugar-free fat-free chocolate instant pudding mix
- 1 ½ Cups (354 ml) fat-free milk (DO NOT use a milk alternative such as almond)
Recipe for the crust in the notes
Instructions
- Add all ingredients to a medium sized bowl
- Stir until milk starts to thicken
- Refrigerate for about an hour

Instructions for the crust:
Dry Ingredients:
1 Cup (122g) self rising flour
⅙th Cup (40g) sugar substitute
¼ Cup (28g) coconut flour
1 Scoop (30g) Isopures vanilla whey protein powder
Liquid Ingredients
1 Egg
1 Egg white
2 Tbsps (28g) melted coconut oil
Add all of your dry ingredients to a large bowl and mix well
Add your liquid ingredients to the bowl and mix until crumbly
Once crumbly use your hands to work the crumbles into a ball of dough
Spray an 8x8 baking dish with non-stick baking spray
Add your dough and form it to the pan by spreading it from the center out
Make sure the bottom is as thin as possible
Use a little water on your finger tips to help you spread the dough out on the pan if your having a hard time doing so
Bake at 350 degrees | 177 celsius for 10-12 minutes
