    How to make a low carb cookie?

    That question sounds harder than it is, trust me. 

    This Low Carb Double Chocolate Chip Cookie Recipe makes one giant cookie.

    It's basically a Lenny & Larry's cookie, but with far less carbs. Actually only about 5 grams net carbs per Double Chocolate Chip cookie.

    Also, this is an easy low carb cookie recipe to make too. Five minutes is all you'll need to make this cookie. Like, literally five minutes. So, if you're looking for a quick and easy low carb snack, this cookie might just be you're answer.

    Low Carb Double Chocolate Chip Protein Cookies Essentials

    1. A food scale to make sure you're as exact as possible with your cookie measurements
    2. A high quality chocolate whey protein powder to give this double chocolate chip cookie a boost of protein and chocolate flavor
    3. Liquid sweetener to keep the carbs and calories lower
    4. Coconut flour - I think this one is the best

    A low carb double chocolate, chocolate chip cookies recipe that's so easy to make, and packed with protein!

    Ingredients

    Scale
    • 1 Scoop (30g) chocolate whey protein powder
    • 1 Tbsp (5g) unsweetened cocoa powder
    • 1 Tbsp (7g) coconut flour
    • 1-1 ½ teaspoon liquid sweetener (on the higher range if using stevia)
    • 1 Tbsp (15g) almond milk
    • ½ Tbsp Lilly's Cocolate Chips

    Instructions

    1. Add all ingredients to a small bowl (except ¼ tbsp) of the semi-sweetened mini chocolate chips
    2. Mix until a dough forms - if to dry add a teaspoon at a time of almond milk until one does form, if too wet add 1 teaspoon of coconut flour and protein powder at a time until one forms - try to aim for what mine looks like in the video
    3. Once the dough develops, coat your work surface with a bit of baking spray and start forming a cookie out of the dough
    4. When a cookie has formed add the remaining chocolate chips, add to a dish and microwave 10-15 sec. (15 IF YOU HAVE A 700 WATT MICRO)
    5. Let stand for 1-2 minutes
    6. Enjoy
    7. *You can also refrigerate the cookie and eat it as a no bake cookie too

    Notes

    Liquid sweeteners all have different levels of sweetness so use less sweetener to start - taste your cookie - and add more if it's not sweet enough.
