Winter is the perfect time to make this deliciously healthy white chicken chili. There are few things better right now than just warming up a bowl of this stuff, crawling under a blanket, and watching Netflix. Atleast, in my world, it doesn't get much better than that.
Oh and by the way, you have my word this is an epic meal prep recipe. It'll only take you about an hour and a half to make, and you'll end up with around seven and a half pounds of chili. Don't worry, if you think that might be to much chili for this weeks meal prep, just freeze and save for later (it should stay for around a month frozen).

Healthy White Chicken Chili Recipe
White chicken chili with a little lime tang and a small kick of spiciness.

Ingredients
- 1 Tbsp (15ml) extra virgin olive oil
- 1 Large onion diced(160g)
- 4 Minced cloves of garlic (12g)
- 2 Medium poblano peppers chopped (40g)
- 1 Chopped jalapeno (14g)
- 1 Tbsp cumin (8g)
- 1 ½ Tsp coriander (2.75g)
- 1 Tsp chili powder (3g)
- 4 Cups (950ml) chicken broth
- The juice from 2 limes (60ml)
- 1 Cup chopped green chilies (120g)
- 1 (26oz | 737g) strained and chopped can of tomatillos
- 1 ⅔ Cup (225g) whole corn kernels
- 2 Cans (31oz | 880g) great north white beans strained
- 1 Can (16oz | 450g) diced tomatoes
- 1 ½ Lbs (.45kg) cooked chicken breast
Instructions
- In a large pot over medium heat add in the first 5 ingredients
- Once all the veggies start to sweat a little bit add in the spices
- Stir the veggies until all the spices have evenly coated them
- Add in the lime juice and chicken broth and stir
- Bring the pot to a small boil
- Add in the rest of the ingredients, cover the pot, and simmer for 45 minutes to 1 hour
