Low Carb Keto Double Chocolate Chip Cookies In 1 Minute
Ok, so today I'm showing you how to make keto double chocolate chip cookies in just 1 minute.
Or, atleast 1 minute is all they take to cook.
But, still, from start-to-finish, you're looking at maybe - maybe - 5 minutes to make these cookies.
And, by the way, I've actually already made several different variations of these low carb cookies on the blog already....I've made Pumpkin Spice, Chocolate Chip, and No Bake Peanut Butter.

Mostly because these cookies are just soooo fudgy, soooo chocolatey, and soooo sinfully delicious!
How To Make Keto Double Chocolate Chip Cookies
Ok, so let's talk about how to make these cookies!
First off, let me just say, if you've been looking for the easiest low carb double chocolate chip cookie recipe on planet earth, you've found it!
And I stand by that statement.
Seriously though, all you have to do is add the ingredients to 1 bowl, mix, shape, and cook.
It doesn't get any easier than that.
Does it?!
Ingredients
As far as the ingredients you'll need to make these cookies, you'll need...
- An egg yolk
- Pure pumpkin (don't worry you can't taste it)
- Blanched Almond flour
- Sifted Confectioners Swerve
- Unsweetened Dark Cocoa Powder
- Keto chocolate chips
- Pure vanilla extract
- & A pinch of salt
The Process
The first thing you'll want to do is separate the egg yolk from the white, and add it to a medium-sized bowl.
Then you'll want to add the bowl to a food scale and start measuring out the ingredients.
Why a food scale you ask?
Well, because baking is a science, and accuracy is important.
Plus, it just helps ensure the calories/macros end up being correct with what you're making.
Anyways, now you'll want to add the rest of the ingredients.
By the way, I highly recommend sifting the Swerve through a wire strainer. It will ensure that it dissolves into the other ingredients when you mix everything up.
And I actually like to sift the almond flour from time to time too. Again, it just helps reduce any clumping, and improves mixing!
So, once that's taken care of, just mix everything together with a spatula until a crumbly consistency forms in the bowl. And then when it does, use your hands to form a ball of cookie dough out of the crumbles.
Now that you've got a ball of cookie dough, you'll want to add a little more unsweetened cocoa powder to the dough.
And you'll want to do this because it will not only add more chocolate flavor to these keto cookies, but it will also give them a more chocolatey appearance as well. Sometimes the almond flour doesn't blend fully with the cocoa powder when you initially add it, and this step ensures that it does.
At this point, you can separate the dough into two smaller balls, and start shaping your double chocolate chip cookies out of them.
So, what I recommend doing is to coat a small plate with baking spray, add the dough to it, and shape the cookie on the plate. Once you've got the cookies shaped, just add the keto chocolate chips, and you're all set to bake these cookies!
How To Cook These 1 Minute Double Chocolate Chip Keto Cookies
Alright, so there are 2 ways you can cook these cookies.
The easy way, which is making them in under a minute in the microwave.
And the long way, which is cooking them in the oven. If you go with this method the cookies will take around 15 minutes to bake.
The cookies turn out delicious no matter what way you cook them but make sure you let them cool before eating them. They need time to set and firm up.
When the cookies come out of the oven/microwave they'll be quite soft, but as they cool they'll harden up and have just the perfect amount of chewiness to them.
So don't over-look that tip if you want to make the best version of these low carb cookies.
Almond Flour Double Chocolate Chip Keto Cookies
Obviously, this cookie recipe works best with almond flour.
But the good news is you don't have to use almond flour to make these cookies if you don't want.
That said if you want to use a different flour, make sure you use the right one.
The 2 best replacements for almond flour are sunflower seed flour and walnut flour. You can substitute those flours on a 1:1 basis with almond flour, and they're both low carb keto flours too.
Coconut flour, on the other hand, IS NOT a good replacement for almond flour. It's incredibly absorbent, and you can't substitute on a 1:1 basis with almond flour.
Trying to use one for another is the easiest way to screw up not just this recipe, but any keto recipe.
So don't make that mistake!
Sugar Free Keto Cookies
Ok, so, there's obviously no sugar used to make these cookies. They're completely sugar free cookies.
Of course, if there was sugar in the cookies they definitely wouldn't be low carb...or keto for that matter.
In lieu of sugar, you'll want to use a keto-friendly sweetener. And my favorite one to use is Swerve.
As I already mentioned, it's what I used to make these cookies.
The reason I like to use Swerve so much is that it's as sweet as sugar. Whereas pure erythritol is only 70% as sweet as sugar.
However, you can also use Lakanto's Monk Fruit Sweetener to make these cookies as well.
Just make sure you use the granulated version and blend it into a powder. Basically, you want to make it "confectioners" style.
And, FYI, Lakanto sells a confectioners version, but it's twice as sweet as sugar.
So you don't want to use that for these cookies.

Ingredients
1 Egg Yolk
1 ½ Tbsp (21g) 100% Pure Pumpkin
1 Tsp (4g) Pure Vanilla Extract
Heaping ½ Cup (60g) Blanched Almond Flour
3 Heaping Tbsps (30g) Sifted Confectioners Swerve
1 ½ Tbsp (7g) Dark Unsweetened Cocoa Powder
Pinch of Salt
Instructions
Add all of the ingredients - except for ½ tablespoon (2g) Cocoa Powder - to a medium sized bowl.
Mix until a crumbly consistency forms.
Once crumbly, use your hands to form a ball of dough, and add the remaining ½ tablespoon (2g) of cocoa powder.
Work the cocoa powder into the dough, and split it up into two smaller balls of dough.
Now coat a small plate with baking spray, add the dough, and shape the cookie.
Once shaped, add a heaping tablespoon (7g) of Keto Chocolate Chips to the top of the cookie, and microwave in two 20 second intervals (***Microwave times may vary this suggestion is for 1100Watt microwaves).
Off-set the plate to the left side for the first interval, and then the right side for the second interval.
Repeat the same steps with the second cookie, and let them cool down COMPLETELY beofre eating them.
Cooking Them In The Oven:
Alternatively, you can bake the cookies in the oven at 325 Degrees Farenheit for around 15 minutes.
Again, let the cookies cool down completely before eating them.
Notes
The Macros DO NOT include the “carbs” from Swerve. Swerve has 0 calories, so it should be tracked as 0 carbs. The FDA makes food companies list “sugar alcohols” as carbs, but that doesn’t mean they should be tracked as such. That’s why it’s ALWAYS important to look at the calories of sweeteners and determine the true carb count FROM THE CALORIES!

Really good recipe I used chopped Dark 90% Lindt Chocolate 1 square instead of the Lily’s I find it a much richer taste.
