Joe Tip (sort of like a "pro-tip" but better): The recipe is super versatile, so don't be afraid to make substitutions. If I don't have Yukon gold potatoes, I'll use russet potatoes instead, and if I don't have chicken broth, I'll use vegetable broth. I've even substituted the Greek yogurt for low-fat sour cream.

And, as I mentioned, whipping these up is super simple. All you have to do is boil the potatoes and cauliflower, fold in the rest of the ingredients, and mash everything until smooth.

STEP 1: BOIL THE POTATOES AND CAULIFLOWER
First things first, start by placing the potatoes in a large pot filled with salted water. Bring the potatoes to a boil, then let them cook for 15 minutes.
After 15 minutes, add the cauliflower florets and cook until the potato chunks and cauliflower are fork-tender. Then, drain the water from the pot.
STEP 2: COMBINE THE INGREDIENTS
